Strawberry Shortcake Cookies

Somehow through a frugal blog or message board I came across an offer for a free subscription to Martha Stewart's magazine. There's not a lot in there that relates to me or my lifestyle, but on the last page of each issue is actually a recipe that is 'down to earth'. This month's recipe was Strawberry Shortcake Cookies. I thought they looked pretty good for something different from the usual chocolate chip, peanut butter, oatmeal, etc. type of cookie. These went together pretty easily and are not too bad. I LOVE Martha Stewart. I have years of back issues and actually buy them off eBay for my collection.

You know, don't you, that if it's you who posted a cookie recipe that I'm going to have to try it too.

I'm on such a strawberry kick, and these are unique enough to make me want to run to the kitchen and make these.

Can't wait to try these soon.

Katy: In the recipe it states these should be served within a day. They are a soft cookie but they have a nice flavor with the strawberries and cream.

I just made this today and I was thinking that they are good. Not too sweet. The recipe states not to keep them for more then 1 day. Honestly, nothing lasts more then a day in our house. I am dieting so I only ate 1/2 of one but I could eat the entire batch on a non diet day:) I am giving these to my neighbor.
