Chocolate Chip Cake

I suppose if it weren't for birthdays at work I wouldn't have a blog. This picture is really crummy, but the reviews on the cake were much better. It's not often I use a cake mix, but if you add enough ingredients it masks it pretty well. This goes together in a snap, very easy to make and turns out a really nice cake.

Chocolate Chip Cake

1 yellow cake mix
1 small box instant vanilla pudding (dry)
4 eggs
1/2 cup oil
1 (8 oz.) sour cream
1 cup chocolate chips
1 cup chopped pecans
1 cup flaked coconut

Beat cake mix, pudding mix, oil, sour cream and eggs together until well blended, about 3 minutes. Stir in chips, nuts and coconut by hand. Grease tube pan. Pour cake mixture into pan. Bake at 350 degrees for 1 hour. Turn oven off, open door and let cake set in pan for 1 hour before removing to cake server.

This could be dusted with powdered sugar and served or make the icing below.

Icing

1/2 stick of butter melted
2 heaping tablespoons cocoa powder
3 tablespoons milk or cream
1-1/2 cups powdered sugar

Blend all ingredients until smooth. Drizzle over cake.

I use cake mixes all the time. It leaves you more time for celebrating.

Mmmm chocolate chip cake. I love that you bake for people at work. That is so sweet, and I bet everyone appreciates it.

Oh Anj...I just had to come by and see this 'other friend' of our mutual friend....Katy. Isn't she just a dear! And I can see why you are 'tops' on her list too....baking for people at work is great. Hey...that is what I do too...and if I didn't have a passion for serving others...literally and foodwise...I would not have a blog either. I am going to put you on my sidebar my fellow foodie! Great blog by the way and hey...what a lot of pans you must have for all the baking you do! Whewie you are some fancy there girl!

I have to say that there are times that I really crave the texture of a box-mix cake! This looks fabulous.

Anj, another temptation to make me stray, grins. Pecans and coconut would be good; I'm not a choc chip fan so would probably omit those. I think I need cake!

I think cake mixes are just fine. I think we should feel less guilty about using them.

Great recipe! Love to start with a cake mix. The cake always comes out far more moist than if you started from scratch! I don't know what they put into those boxes but I sure like what come out!!
