COWBOY COOKIES

I haven't blogged in a long time.  I need to update some recipes and decided to try and add a few
new ones that I've made recently.  I try and bake cookies for church on Sundays so I've run through most of my usual recipes.  This recipe has been around a long time and not sure now it has been attributed to Laura Bush as her Cowboy Cookies.  They are a good cookie no matter how they came about.

COWBOY COOKIES

1 cup softened butter
1 cup packed light brown sugar
1/2 cup granulated sugar
2 large eggs at room temperature
1 large egg yolk at room temperature
2 teaspoons vanilla
2 cups all purpose flour
1 teaspoon baking soda
1/2 teaspoon cinnamon
1-3/4 cup old fashioned oats
1 cup shredded coconut
1 cup chopped pecans
2 cups chocolate chips

Preheat oven to 350 degrees.  In a mixing bowl combine the softened butter and sugars.  Mix until well for 2 to 3 minutes until well blended.  Add eggs and vanilla and mix until smooth.  In another bowl mix the flour and baking soda.  Add the flour to the wet mixture.  Add in the oats, coconut, pecans and chocolate chips.  Blend well.  Drop by tablespoons onto parchment lined baking sheet.  Bake at 350 degrees for 12 to 14 minutes.
