Pineapple Angel Food Cake

This is an old Weight Watchers recipe that has only 2 ingredients. I served it with some Light Cool Whip.

PINEAPPLE ANGEL FOOD CAKE

1 box Pillsbury Angel Food cake mix
1 20 ounce can crushed pineapple in its own juice
Mix cake mix with pineapple (do not drain). Mix with a mixer until smooth. Pour into a 9 x 13 pan that has been sprayed with cooking spray. Bake for 35 minutes at 350 degrees. Can also make cupcakes.

Did you make this for your work thing? I think you mentioned that it was supposed to be light dishes.

This really does look good Anj. As an aside I have tagged you for a MEME. I know...I know. You are not obligated and my feelings will not be hurt if you don't participate. We can't do everything in our busy lives. Check out my answers though sometime when you have a moment!

I've been craving angel food cake lately. I know it's complicated to bake from scratch, so maybe I'll invest in a box mix to hold me over until eggs are at a decent price to experiment lol This looks great! Have you considered using cherry pie filling? Instead of mixing it into the batter, maybe do some sort of layer cake. Or do cupcakes, cut out a little crater, and fill.
